We'd like to welcome our newest gourmet meat ched, Mardi Dean, who has years of experience in selecting and preparing the choicest cuts of aged beef.
Mardi's remarkable skills have been honed in some of Sydney's finest dining establishments, and her dedication to perfecting the art of sauces is a vital source of artistic inspiration for our already established culinary team.
This season's produce is also shaping up to be interesting, and Mardi is working on creating some new dishes that make use of the unique flavours and textures that only local Autumn produce can provide.

Our pre-Christmas preparations are gaining momentum, and we're particularly excited to feature a selection of gourmet sausages from Brendan Voss of B&M Quality Meats, Newport. If particular note are his Turkey, Red Wine & Cranberry sausages, which have been a seasonal favourite for the last three years.
Loyal diners will also be rewarded for their patience this month as our latest Wagyu beef dishes have been absolutely superlative.
